Blackberry Ricotta Brioche French Toast Bake

Blackberry Ricotta Brioche French Toast Bake:


Yield: 4 Servings

Cook Time: 1 Hr 30 Min


Ingredients:

- 2 Pints Fresh Blackberries, ½ Cup Reserved for Garnish

- ½ Loaf Brioche Bread

- 3 Eggs or Bob’s Red Mill Egg Replacer

- ½ Cup Whole or Almond Milk

- ¼ Cup Heavy Cream or Coconut Cream

- 1/3 Cup Granulated Sugar or Sugar In The Raw

- 1 Tbsp Vanilla Extract

- 2 tsp Sea Salt

- ¼ Cup Whole Wheat Flour

- ¼ Cup Brown Sugar or Coconut Sugar

- ½ tsp Ground Cinnamon

- ¼ tsp Sea Salt

- ¼ Cup Butter or Earth Balance, Cubed & Chilled

- Optional: Maple Syrup or Powdered Sugar


Directions:

1. Preheat oven to 375° F. Lightly grease a 9x13 inch baking dish. Slice Brioche bread into 1-inch cubes. Spread evenly into the baking dish.

2. In a medium bowl, add the eggs, milk, cream, sugar, vanilla extract, and sea salt. Mix with a fork or whisk to combine. Pour mixture over the cubed brioche pieces and set aside while you make the crumb topping.

3. To make crumb topping, mix together the flour, sugar, cinnamon, and sea salt in a large bowl. Using, a pastry cutter or fork, “cut” in the butter until small crumbs begin to form.

4. Next, halve remaining blackberries not used for garnish. Sprinkle halved blackberries over the cubed brioche pieces.

5. Sprinkle crumb topping over the bread mixture and bake at 375° F for 45 minutes to 1 hour, depending on how fresh the brioche bread is. The bake is done when the outer edges are beginning to pull away from the sides.

6. Garnish the bake with fresh blackberries or powdered sugar if you’d like- don’t forget the maple syrup! Enjoy :)


Tips/Tricks:

- You can cube brioche bread and leave out overnight for it to give you more of a crunchy crust when you bake the French toast.

- You can also make this ahead of time by combining everything, minus the crumb topping and baking the next day for an “overnight” hack.
