The French have seemed to master most culinary creations, including ~The Omelette!~ I love me a good omelette, and this recipe creates a light and fluffy satisfying breakfast! Top your dish with some fresh arugula and you have a restaurant quality meal, right from home, enjoy!
French Omelettes w/ Fresh Arugula Recipe:
Yield: 2 Omelettes
Cook Time: 15 Min
Ingredients:
- 1 Tbsp Butter or Olive Oil
- 4 Eggs, 2 per Omelette
- ¼ Cup Heavy Cream
- 1 tsp Sea Salt
- 1/2 tsp White Pepper
- 1 Cup Arugula, Washed
- 2 Green Onions, Chopped
- ¼ Cup Red Onion, Diced
- ¼ Red Bell Pepper, Diced
- 1/3 Cup Shredded Cheese (I used Colby Jack)
Directions:
1. Heat a small skillet or egg pan over medium heat. Add butter and let melt.
2. In a small bowl, crack two eggs and add half the heavy cream, half the salt, and half the white pepper, whisk together.
3. Pour mixture into the skillet. As mixture cooks, stir the eggs with a rubber spatula and let the uncooked parts pour onto the skillet. Once the eggs have started to coagulate after 3-4 minutes, add the red onion and bell pepper. Cook for 1-2 more minutes.
4. Fold the omelette in half and continue to cook until the center is fully cooked.
5. Top with fresh arugula and green onions, repeat process for each additional omelette.
6. Enjoy!
Tips/Tricks:
- Omelettes can be tricky to make, and some people prefer to flip the omelette as it is cooking. If you prefer cooking them that way, I would recommend adding a small amount of additional butter and use a rubber spatula to help “release” the edges before you try to flip.
