Lasagna Roll-Ups

Tired of the same old boring lasagna? Try these fun lasagna roll-ups at your next dinner for a change! They are perfect for making small batches of lasagna if you are cooking for 1 or 2 people, I hope you enjoy this recipe :) P.S. IT'S ALSO VEGAN!!



Lasagna Roll Ups Recipe:


Yield: 4 Servings

Cook Time: 45 Min


Ingredients:

- 1 Tbsp Sea Salt

- 8 Lasagna Noodles

- 1 tsp Olive Oil

- 14 oz Can Tomato Sauce

- Daiya Vegan Cheese or Shredded Cheese

- Vegan Cream Cheese or Ricotta Cheese

- 1 Cup Arugula, Washed & Dried

(Optional 1 tsp dried Thyme, 1/2 tsp dried Basil)


Directions:

1. Preheat oven to 350° F. Grease a 9x13 baking dish.

2. In a large pot, add water and sea salt and bring to a rolling boil. Place 8 lasagna noodles in and boil for 5-6 minutes until al dente.

3. Drain the water from the pot, once they are finished cooking, and add a small tsp of olive oil after adding the noodles back in the pot, toss to coat with oil.

4. Let noodles cool slightly and then lay one noodle out on a cutting board and layer the cream cheese or ricotta first, then add the tomato sauce, then top with arugula and Daiya or cheese. Roll each noodle into a log and place in the baking dish. Repeat until all noodles are finished.

5. Bake the lasagna rolls in the oven for 15-20 minutes or until the tomato sauce starts to bubble, enjoy!


Tips/Tricks:

- Top with extra Daiya or cheese before and after going in the oven :)

- You can pair these with some garlic bread topped w/ Daiya too!
