Mini Pancakes Bites w/ Nutella:
Yield: 2 Servings
Cook Time: 10 Min
Ingredients:
- 1 ½ Cups Whole Wheat Flour
- ½ tsp Baking Soda
- 3 tsp Baking Powder
- ½ tsp Sea Salt
- 1 Tbsp Sucanat Sugar
- 4 Tbsp Earth Balance or Coconut Oil
- 1 ¼ Cups Almond Milk
- ¼ Cup Dark Chocolate Hazelnut Spread or Nutella (Not Vegan)
- Maple Syrup for Topping
- Blueberries or Raspberries for Topping
- *Powdered Sugar- Optional
(Not Vegan)
Directions:
1. First, add the flour, soda, powder, and sea salt and sugar to a medium bowl and whisk together. Melt Earth Balance or coconut oil and add to the flour mixture.
2. Slowly pour almond milk into flour mixture as you whisk together. Stop mixing once combined. (Over-mixing can lead to flat pancakes!)
3. Next, grease a large skillet or a griddle w/ cooking spray and heat over medium high heat.
4. Ladle batter onto skillet or griddle in silver dollar size pancakes. Cook until bubbles no longer form, flip, and cook on other side for 1-2 more minutes.
5. Serve with berries, powdered sugar, and maple syrup, enjoy!
Tips/Tricks:
Pour batter into a squeeze bottle for an easier way to make the mini pancakes more uniformly :)
