Roasted ‘Cheesy’ Asparagus

Are you eating your greens!?? This is the perfect side dish to pair with almost any kind of entree! Eat it with lunch or dinner and you've got yourself a nutritionally dense side that if super satisfying, enjoy!

Roasted 'Cheesy' Asparagus Recipe:


Yield: 4 Servings

Cook Time: 20 Min

Ingredients:

- Asparagus, Washed & Trimmed

- 1 ½ Tbsp Nutritional Yeast

- 3 Garlic Cloves, Minced

- ½ tsp Himalayan Pink Sea Salt

- ½ tsp White Pepper

- 1 Pinch Chili Flakes

- 1/8 Cup Olive or Vegetable Oil

- ½ Lemon, Zested

- *Additional Nutritional Yeast for Topping

Directions:

1. Preheat oven to 375F. Lightly grease a baking dish w/ cooking spray.

2. Wash and prepare asparagus. Dry-off any moisture with a paper towel and place in the baking dish.

3. Drizzle oil over asparagus and sprinkle nutritional yeast, garlic, sea salt, pepper, chili flakes, and lemon zest over the asparagus.

4. Using tongs, flip asparagus to coat the other side in seasonings.

5. Bake in oven for 12-13 minutes or until the asparagus begin to crisp up on the ends. Top with extra nutritional yeast if desired, enjoy!

Tips/Tricks:

- Half-way through cooking, flip asparagus to create a more uniformly cooked product.

- Add onions or cherry tomatoes to this side dish for more color and veggies!
