Smashed Black Bean & Sweet Potato Street Tacos

These tacos have easily become one of my favorite dishes to make! They come together in about thirty minutes, taste amazing, and the best part... they're Vegan! I try to always have a can of black beans on hand in case I want to whip these up in no time!

Smashed Black Bean & Sweet Potato Street Tacos:


Yield: 6 Servings

Cook Time: 40 Min

Ingredients:

- 1 Lb Sweet Potatoes, ½ in Cubes

- 2 Tbsp Olive Oil

- 1 tsp Salt

- ¼ tsp Pepper

- ½ Large White Onion

- 2 tsp Chili Powder

- ½ tsp Cumin

- 1 (15oz) Can Black Beans

- ¼ Cup Water

- ¼ Cup Cilantro, Chopped

- ¼ Cup Green Onions, Chopped

- 12 Corn Tortillas

- Lime Wedges

- *Optional- Feta or Cotija Cheese

Directions:

1. Stack tortillas in foil and cover completely. Heat oven to 425F.

2. Place sweet potatoes on a rimmed baking sheet. Drizzle with 1 tbsp of oil and salt and pepper. Toss to combine, roast 20 minutes, stir and continue roasting until potatoes brown. Place foil-wrapped tortillas in oven to warm.

3. Next, heat oil in a skillet. Add onion, cook until translucent. Stir in chili powder, cumin, salt, black beans, and water.

4. Cover and reduce 5 minutes. Mash or blend beans. Remove tortillas from oven.

5. Build tacos starting with the black beans then topping with sweet potato and garnishes.

6. Garnish with avocado, cheese, lime wedges, cilantro, green onions, etc.

Tips/Tricks:

- You can speed the process for these tacos up by boiling the sweet potatoes the night before, then tossing in salt, pepper, and oil the next day, roast for 5-6 minutes.
