One of my favorite appetizers to make are these spinach artichoke crostinis! They are super easy to prepare and definitely a crowd-pleaser at events! This recipe is a plant-based version, however you can always substitute traditional products for the vegan ones, and it will have a similar outcome- I hope you enjoy :)
Spinach Artichoke Crostinis Recipe:
Yield: 12 Servings
Cook Time: 35 Min
Ingredients:
- 1 Baguette, Sliced ¼ in. Thick
- 2 Tbsp Olive Oil
- 8 oz. Vegan Cream Cheese: (I used Kite Hill)
- 8 oz. Frozen Spinach, Chopped
- 10 oz. Marinated Artichoke Hearts
- 2 Tbsp All Purpose or Whole Wheat Flour
- 2 Garlic Cloves, Minced
- 1 Cup Vegan Cheese: Parmesan Style
- Cooking Spray
Directions:
1. Preheat oven to 350°F. Spray a medium sized baking dish with cooking spray. (8x8 or 9x13 would work best!)
2. In a mixing bowl, add cream cheese, spinach, marinated artichoke hearts, 2 Tbsp Flour, garlic cloves, half of the vegan cheese.
3. Fill baking dish with artichoke dip and finish by sprinkling remaining vegan cheese over the top.
4. Bake in oven until the dip begins to bubble and brown slightly. (About 20 minutes)
5. Remove from oven and let cool slightly. Brush crostinis on one side with olive oil and broil in the oven for 2 minutes, let cool once toasted.
6. Top cooled crostinis with a dollop of spinach artichoke dip, enjoy!
Tips/Tricks:
- Want more flavor? Add some chives or green onions into the mix or sprinkled on for a fun twist!
- You can also leave this as a dip and enjoy eating with fresh pita bread, crackers, or even veggie chips!
