Does it always seem like your bananas turn brown in the blink of an eye? My solution is to save those brown bananas, freeze them, and keep them on hand for a rainy day when banana bread sounds amazing! This recipe has no eggs or dairy, but it does have mini dark chocolate chips...and is nothing short of being delicious! These are perfect for taking on-the-go and I promise you won't be disappointed!
Vegan Mini Banana Breads w/ Mini Dark Chocolate Chips Recipe:
Yield: 4 Mini or 1 Loaf
Cook Time: 1 Hr 20 Min
Ingredients:
- 2 Cups Flour
- 1 Cup Sugar
- 1 tsp Baking Soda
- ½ tsp Salt
- 2 Tbsp Flax Seed Meal + 3 oz Water (Let sit 5 Minutes)
- ½ Cup Coconut Oil, Melted
- 2 ½ oz Coconut Cream + ½ tsp Lemon Juice (Combine)
- 3 Bananas, Mashed
- ½ Cup Mini Dark Chocolate Chips
- *Optional: Chopped Pecans, Walnuts, or Extra Bananas Sliced on Top
Directions:
1. Combine flour, sugar, baking soda, and salt in a bowl.
2. In a separate bowl, combine flax seed meal “eggs”, coconut oil, and coconut cream.
3. Add the wet ingredients to the dry ingredients and mix, stirring until incorporated. Fold in mashed bananas, chocolate chips, or nuts.
4. Pour batter into greased loaf pan or mini loaf pans.
5. Bake at 350F for 1 hr or 35 minutes for minis. Check for doneness with a toothpick. Let cool before slicing, enjoy!
Tips/Tricks:
- Using a bread knife to slice the bread will help to not crush it while you are slicing into individual pieces.
